From 2025 to 2060, the number of people with any one of four CV risk factors — type 2 diabetes, hypertension, dyslipidemia, and obesity — is projected to increase by 15.4 million, to 34.7 million. Each of these is intimately linked to the modern Western diet and the consumption of large quantities of ultra-processed food (UPFs) and thus amenable to lifestyle and dietary interventions like Culinary Medicine. According to a recent study published in the Journal of the American College of Cardiology, from Harvard University, the number of people with any one of four cardiovascular disease types — ischemic heart disease, heart failure, myocardial infarction, and stroke — is projected to likewise more than double, from 3.2 million to 6.8 million. Recent data suggest that 80% of heart attacks and up to 90% of all cases of type 2 diabetes are preventable with such lifestyle interventions as reducing UPF consumption.
